
Domaine Pierre Guillemot is a family-run winery located in Savigny-lès-Beaune, Burgundy, deeply rooted in the region’s winemaking tradition. The estate has been managed by the Guillemot family for eight generations, a testament to their expertise and dedication to producing quality wines.
The estate comprises approximately 10 hectares of vineyards, primarily planted with Pinot Noir, but also producing a small quantity of white wines from Chardonnay and Pinot Blanc. The vines are situated mainly on prime plots within the Savigny-lès-Beaune and Corton appellations. Among the most notable wines are the Savigny-lès-Beaune Vieilles Vignes, as well as several Premier Crus such as “Aux Serpentières” and “Les Narbantons.” The wines produced by the estate are renowned for their finesse, balance, and exceptional aging potential.
The estate’s winemaking methods are traditional, with a deep respect for the terroir. The grapes are often harvested by hand, and vinification is carried out with minimal intervention, allowing the characteristics of the soil and climate to fully express themselves in the wine. The red wines are kept in barrel with 25 to 30 percent new wood for up to 15 months, then bottled the following February, unfiltered. These wines are prized for their complex structure, red fruit aromas, and aging potential.
The surprise in this cellar is how delicious and indeed age-worthy is their white Savigny, Dessus des Gollardes, which is 70 per cent Pinot Blanc (Gouges) and 30 per cent Chardonnay.
